Minestrone

Sometimes you just get in the mood for good soup! I have always been a big soup fan and especially on a cold or gloomy day, this Minestrone recipe hits the spot.

  • Difficulty: Easy
  • Prep Time: 15-20 minutes
  • Cook Time: 30 minutes
  • Yields: 8 Servings

Ingredients


  • ½ lb Ground Beef
  • 15 oz Red Kidney Beans
  • 15 oz White Beans
  • ½ cup Carrots
  • ½ cup Celery
  • ½ cup Zucchini
  • ½ cup cut green beans
  • 1 cup Pasta
  • 4 cups Vegetable Stock
  • ¼  cup Tomato Paste
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Oregano
  • 1 tsp Garlic
  • 1 tsp Onion powder
  • 2 tsp italian seasoning
  • 2 tablespoons parsley

Cooking Tools


  • Skillet
  • Stock Pot
  • Strainer

Directions

-Brown ground beef

-Boil pasta until al dente (10-15 minutes)

-Combine all ingredients into stock pot 

-Bring to medium heat for 15-20 minutes

-Garnish with parmesan cheese, serve with a warm french baguette and enjoy!

Options

-Add any seasonal vegetable to this soup – the more the merrier!

-Slow cook in crockpot on low heat 6 hours
